Glut busting

What do you do when you have planted 4 courgette plants when only one of us eats courgettes, and these plants prove to be rather productive? Well apart from eating alot of courgettes, I have discovered a recipe that has courgette as a secret ingredient, to make the most wonderfully moist chocolate cake. Even Stuart, now he has decided to try it, likes it! The recipe goes as follows:

120g butter (softened)
125ml sunflower oil
100g caster sugar
200g soft brown sugar
3 eggs, beaten
130ml milk
350g plain flour
2 tsp baking powder
4tbs cocoa
450g courgettes, peeled and grated
1tsp vanilla

Line a 20x35 cm baking tray with baking paper and set oven to 190 C/350F

Mix butter, oil, and both sugars together until light and fluffy. Gradually add the eggs, one at a time, and then the milk. Mix thoroughly.

Sift the dry ingredients into the mixture and fold in.

Stir in courgettes, and vanilla and spoon into the tin.

Bake for 35-40 minutes. Cut into slices whilst still warm.
